The versatility of grains is something that I discovered this year: the possibility of preparing them in so many ways makes them occupy more space in my meals. Now, I'm hooked with the grain croquettes (both fried and baked), they are so simple and delicious, they just need good condiments... Well, they don't work with black beans or (at least it didn't work for me), but with other types it works perfectly.

They really are so versatile! I love finding new ways to use some of my favorites. Incorporating good wholesome grains really does keep me feeling my best, as well, with all of the hearty fiber and plant-based protein. I think I would agree with you on the croquettes. I seem to have better luck with other beans and lentils, as well. I tend to use black beans like this or in soups. Good thing there are so many options to choose from for all different purposes!
