There are so many dishes that you can learn to cook if you will just explore your love for cooking especially if you are already a mother. Being a mother I am really enjoying to tried new dishes that will enhance more my ability in terms of cooking. I am really amazed to watched cooking show and from there I get so many ideas that I never thought it’s possible to make dishes and for me that is a challenge and I adapt it also to my knowledge in cooking. Last weekend while watching a cooking show it got my attention to try to cook “Crispy Kare-Kare”, honestly I once in a while cook “Kare-Kare” but not tried to fry the meat first, I just boiled it and combine all the ingredients of Kare-Kare but with this “Crispy Kare-Kare” it’s different.
So, what I did, I boiled the meat first before frying to make it tender and more crispy. The same process in a separate pan I just add 1 tablespoon of cooking oil, add minced garlic together with vegetable ingredients like sitaw, talong, petsay, and puso ng saging and set it aside. I just separated the vegetables to avoid over cooking of it and on the stock of the meat I put 1 clove of onions, 1 cup of giniling na mani, 1 cup of peanut, atsuete dissolve in 1 cup of water for coloring just make sure to use strainer for the atsuete and also add fish salt to taste.
It’s a big accomplishment for me to add some twist to my usual “Kare-Kare” dish that I am cooking for my family and what’s more make me happier is that they really appreciate it and we really enjoyed our lunch together. You should try this dish also and I am sure your family will love it too.
