Blockchains are simply systems of accounting.

Not simply

It represents a new and superior way of recording and memorializing transactions or of registering things publicly.

It represented ; but not anymore. At this point in time, Bitcoin alone, isn't enough of an example to explain the tech given how much it has already evolved.
