Just went through this very simple but quite educational picture. This sums up the difference between the two main (because there are more) forms of producing cryptocurrency,
Other forms also exist, like hybrid (ESP, maybe other but I'm not sure), Vericoin also has a specific way of producing its currency, which can be seen on this video :
Which is vrc/vrm binary-chain, sounds promising but we are at the beginning of this method and a lot more has still to be discovered.
Hope I helped you, even the slightest bit, to understand a bit more cryptocurrency and its mechanisms :)
