The right time
The process of maturing the coffee fruit is closely related to the process of sugar formation. Can you guess that the optimal sugar content is in the red fruit.
When the fruit is at this stage, farmers flock to the garden for harvest. In some of the gardens we visited, there were red picked all and there was a little mixture of the immature green color. The reason for the cost of picking and selling the same is the reason we often hear.
What do we do? Communication slowly. Talking. That the best taste is not only valued from the price alone but also will be a pride for farmers. This is what we do, for the coffee we want.
