When you're down with a cold or the flu, or if the weather is crazy cold outside, there's nothing like a homemade pot of Chinese Rice Porridge (aka Congee or Jook). I made this with chicken and dried beancurd (aka known as dried tofu, tofu skin, or "foo jook") and it was comfort in a bowl. Yum.
