Along with my lemon balm, borage leaves, and catnip, today I am dehydrating strawberry leaves. These leaves are one of hte many I add to my mixed greens blend that I add to casseroles, soups, sauces, and gravies to get more healthy, organic greens in our diet.
Strawberry leaves are loaded in vitamins and trace minerals and compounds that promote healing and good health. Some of the medicinal benefits to strawberry leaves includes preventing cancer, macular degeneration, and rheumatoid arthritis.
One important thing to note is that strawberry leaves should be consumed only totally raw or completely dehydrated, no where in between. There is a chemical decomposition that takes place in the middle of the drying process that can make the leaves unsafe to consume.

Interesting! I never considered eating strawberry leaves. Might have to try some in my next salad. :)
When eaten raw, they have a very green flavor, if you know what I mean. I rather like it :)
