Hello friends, I wanted to eat something sweet but at the same time acid, and I thought about baking a lemon cake, that combination fascinates me, and as I am not selfish I share it with you to try this divinity.
I replaced butter with oil, it is just as tasty, I confess that this is the first time I have made it with oil and I tell you that it does not change the taste.
Finally I made a glaze, remember that the glaze will do depending on the consistency you want, if you want more liquid you add more lemon, and if you want thicker you add more powdered sugar.
I made this cake in a 22 cm mould, it is a small cake, if you want it bigger, double the ingredients. If you have any questions or if you do, tell me in the comments.
Ingredients:
β’2 eggs
β’1 cup sugar
β’3/4 cup vegetable oil
β’2 cups all-purpose flour (sifted)
β’2.5 teaspoons baking powder
β’1/2 cup milk
β’1/4 cup lemon juice
β’1 teaspoon vanilla essence
β’Lemon zest
Preparation
Preheat the oven
Beat the eggs
Add the sugar
Add the vegetable oil
Add the milk
Add the lemon juice
Add lemon zest
Add flour (you have the baking powder spoonfuls)
Finally add the vanilla.
In a previously buttered and floured mould, place the cake mixture in the oven at 170ΒΊ for 45 minutes or until it comes out clean when a toothpick is inserted.
Glazing
Ingredients
β’3/4 pulverized sugar
β’2 tablespoons lemon juice
Preparation
Mix the 2 ingredients little by little until the desired consistency is achieved.
Add to the cake when the cake is already at room temperature.
