Triple Berry Bake Recipe (From ''The Spark Health Diabetes-Fighting Cookbook'') - #2

Here is a recipe of Triple Berry Bake that you might enjoy !

INGREDIENTS:
• 2 cups old fashioned Gluten Free oats
• 1/2 cup blueberries
• 1/2 cup blackberries
• 1/2 cup strawberries, cut
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 2 tsp cinnamon
• 1 1/2 cups almond milk
• 1 large egg
• 1 teaspoon vanilla extract

PREPARATION:
• Preheat oven to 375.
• Lightly grease medium sized casserole dish with olive oil.
• In a medium sized bowl, mix Gluten Free oats, baking powder and salt.
• Stir in almond milk, egg, vanilla extract, and cinnamon.
• Stir in berries until mixed well.
• Pour mixture into casserole dish and cook for 20 minutes.

Yields: 6-8 servings.
