Its true name is sucrose and its chemical formula is C12H22O11. The chemical formula for cocaine is C17H21NO4. Sugar’s formula again is C12H22O11. For all practical purposes, the difference is that sugar is missing the “N”, or nitrogen atom.”

When baking you can reduce the sugar content by 25% and it won't have any affect on the taste, texture or appearance. There may be a slight difference if you spend a while comparing them but nothing major. I looked at sugar for my home economics coursework, the different types, what it does, our daily limits and the affect sugar has on certain baking products.

All depends on the sugar, its not all the same. Stay away from empty calories. Sugar from fruits is the best. Because you are getting more then just the sugar. :) Fiber is one those! Fiber is awesome!
