In all seriousness, when I was living in China, I used to see restaurants with a sign outside that had a picture of a goat, a picture of rooster, and a picture of a Labrador retriever.
I figured all the stereotypes had to be grounded in some fact. They say you never see any stray cats around a Chinese restaurant.
I've never seen cat on a menu anywhere, although some people there do have a much more broadly defined diet than we prescribe to in the west. I think it might have something to do with the fact that they have been faced with starvation at various points in their history, so they couldn't be as choosy as us relatively spoiled westerners. On the other hand, I know a lot of Chinese who aren't on board with the whole idea of such broad food choices. Like any people, they vary within their society regarding ideas on how the world should work.
You are spot on. We are incredibly spoiled in the West in many ways. What we consider "hard times" is only scratching the surface of what many endure. And again I'm speaking in generality, this does not apply to all, however I believe it does apply to the majority.
Also, there was a huge crackdown on putting rat meat in dishes where they would disguise it as goat. Hopefully I managed to skip those restaurants. :P

I think there is a huge confusion over the concept of a pet and the concept of a food animal. Some people eat rabbits and some people keep them as pets. I think that someone who had a pet rabbit but also enjoyed rabbit stew would still be horrified at the suggestion of eating their pet. There is an emotional bond with a pet that we just don't have with food animals.
If vegans view all animals as pets (they have an emotional bond with them) I can see how this poster makes sense. However, I think many people just don't see things this way.
