Hey, @bobskibob.

Can't disagree. I've had Chinese made by Chinese people (my daughter-in-law is of Chinese descent and her parents have been restaurant cooks), and while I'm sure there's some pandering to palate and ingredients that are different, I still find Chinese food to be not quite as exciting as it should be. Italian might be too exciting all the time, though, but I definitely prefer zesty to bland, I guess. :)
