This is the easiest and quickest method I've ever made fajitas and it's a healthy alternative because your baking everything!

INGREDIENTS:
3 chicken breasts
1 red pepper (sliced)
1 yellow pepper (sliced)
1 green pepper (sliced)
1 onion (sliced)
salt and pepper
1tsp chilli powder
1tsp cumin
2tbsp all purpose seasonings (or: 1tsp- paprika, cayenne powder, garlic powder)
2tbsp olive oil
6 tomatoes
2 green chillis
juice 1 lime
1tsp sugar
pinch salt
small bunch chopped coriander
To serve: tortillas, coriander, soured cream (optional: avocado slices)
METHOD:
Preheat the oven to 180c.
Place the chicken, peppers, onions and spices in a large bowl and toss together until everything is evenly coated.
Place the chicken mix on a baking tray, leaving space on one side. In the space place your tomatoes and chilli.
Bake for 25-35 minutes until the chicken has cooked through.
Put the roasted tomatoes and chillis in blender with coriander a few of the roasted onions, lime, sugar and salt, and blitz until salsa texture.
Serve the chicken fajita with the salsa, soured cream and fresh coriander in a warm tortilla.
