Hey Brian,
Potatoes, being one of my favourite foods, it's always nice to see a new way of cooking them. Haven't seen the half cuts down the sides so they easily break apart before but seems like a good idea. Is there a reason you don't just cut the whole way through? Does it even matter?
Probably a little more effort to make mine but I like to boil or steam them till they are getting soft, just before you might take them off the heat to mash them. Shake them around in the pan roughly until they begin to fall apart. Not enough to destroy them but enough to fluff up the outsides of them.
Add garlic powder, rosemary, thyme, smoked paprika and salt + pepper. Bake them at 200 until they crisp up to your liking. If you want them extra crispy you can use a clean baking tray and put oil in the bottom and let that heat up before adding the potatoes and adding to the oven.
Bad picture but I didn't think I would be sharing it haha. Made it for a roast dinner. Hopefully you'll give them a try, they a damn good, I'll be trying yours today I think.
Damn thanks for the thorough write up, ill try your taters this week!
Sweet, let me know how they go. The shaking them up is probably the hardest part, if you don't have a lid, just stick them in any container with a lid and shake them up.
Good luck, hope you like them.
