Its been literally forever since I baked. I put myself through my first couple years of college mainly baking bagels, but i was also responsible for scoring and baking the baugettes and other artisan breads that they left for me from the morning shift... At least according to jim, my baking mentor, if you don't need to score it to keep it from exploding in the oven, then its not going to be fluffy enough inside...
