Here's an idea... Halloween is a few days away and if you're looking for a healthier treat idea, give these Banana Coconut Ghosts a go. They're better for you than ice cream and they taste just as good. Feel free to get creative to surprise your guests just like I did with the tangerine pumpkins.
Ingredients: - 2 Large Bananas
- 1/4 cup Dried Unsweetened Coconut
- 1 tbsp Coconut Oil
- Dark Chocolate Chips
- 4 Popsicle Sticks
Directions:
- Peel bananas and cut into halves.
- Stick popsicle stick into flat end of banana and place in freezer until firm.
- Once firm, roll bananas in coconut oil and then roll in dried coconut flakes.
- Lay coated bananas on a plate and use dark chocolate chips for the eyes and cereal for the mouth.
- Serve immediately.
