In my locality we know this vegetable as CHIMBOMBÓ, the use that I know of it is as an ingredient in mondongo soup (a dish based on belly, tail and legs of cattle). Because of its composition, it gives thickness to the soup, that is, the chimbombó contains a gelatinous substance that gives the soup a certain consistency.
I also remember that when my mother was pregnant, her feet swelled up a lot and my grandmother told her to take the water from the chimbombó, what I did not know was how beneficial this vegetable is. Among those that prevail the following:
*It serves to combat trans fats, diabetes and bad cholesterol.
