Pure chemistry:

Salt (NaCl sodium cloride) + citric acid (lime or lemon) = a stronger (than citric) acid!

To reduce the acidity, you will need baking soda (bicarbonate) or milk.

Absolutely.. but it will make the soft fruits crunchy too
