Coffee that is ready to harvest can usually be seen from the color of the fruit skin. The fruit is red but there are also farmers who harvest coffee when the fruit is still yellow even when still green for various reasons.
Each level of fruit maturity produces different coffee characteristics. Here are the characteristics:
Green and Green Yellowish, coffee color is still young. The seed has a pale whiteish color and wrinkles, the resulting posture is still very weak. Should not be picked.
Yellow Redness, coffee is beginning to mature. The smells and postures that have been owned have been steady, the seeds are colored kaabuan. Already in quotes.
Full Red, the coffee has been perfectly cooked. It has a tasteful aroma of taste. This is the best condition.
Old Red, coffee has been overcooked. Coffee beans are brown or black. fragrance and quality began to decline. Removing the flavor is like the smell of the soil.
If it has matured, the fruit of the coffee will be beef soft and slimy and taste sweet.
