Maybe Kuah Pliek was sounds foreign for other region. But not for Aceh people. This food was the most typical culinary in Aceh. The recpe of Kuah Pliek was the heritage of the ancestors of Aceh society with the taste typical that rich of herbs and spices. The main raw materials to cook Kuah Pliek is Pliek. That is the coconut residue leftover of making coconut oil that experienced the decay that has been dried.
There are the recipe of Kuah Pliek:
The ingredients:
- 100 gr of long beans
- 100 gr of melinjo leaf
- 100 gr of melinjo fruits
- 100 gr of green eggplant
- 2 of purple eggplant
- 1 of chayote
- 200 gr of small shrimps
- 2 Liter of coconut milk
- 200 gr of pliek
- 2 of lemon grass
- 1 of flumsy
- 5 sheets of lime leaves
- 30 gr of papaya flowers
- 30 gr of young jackfruit
- 2 of temurui leaves ( curry leaves)
- 5 of green chili
The ground spices:
- 5 clove of onions
- 1 cloves of garlic
- 10 of cayenne pepper
- 1/2 teaspoon of coriander
- 1/4 teaspoon of pepper
- 1 segment of ginger
- 1 segment of turmeric
- 6 of sunti acid ( asam sunti)
- Salt
How to make:
- Cut out all of vegetables
- For long beans and melinjo fruits. It must be boiled first. Heat the water until boiling and then put in the vegetables after the water boiling in order to the colors of the vegetables stay green
- Blend the spices. For pliek, blend it separately and filter it together with coconut milk
- Then, prepare the skillet. Put in the all of vegetables, small shrimps, coconut milk, pliek, ground spices, and all of vegetables. Add the salt. Stir it in order bto the coconut milk not broken. Test the taste of kuah pliek
- Cook until well done and kuah pliek ready to eat.
Kuah pliek will feels fuller if eat by using the Ikan Asin and rice...I surely that you will eat a lot.
