Putu Ayu Ubi Ungu
Ingredients
150 gr steamed purple sweet potatoes
150 ml of thick coconut milk
2 eggs
150 grams of flour
100 grams of sugar
1 tsp vanilla powder
1/2 coconut (grated)
1/2 tsp salt
1 pandan leaf
Step
Steam the grated coconut that has been given salt & pandan leaves for 15 minutes. set aside.
Blend the purple sweet potatoes and coconut milk until smooth. set aside.
Beat eggs, sugar & vanilla powder with high speed until white expands.
After that, lower the low speed, add flour, shake until well blended.
Add the purple sweet potato mixture that has been blended earlier. stir until well blended.
Spread the mold with a little vegetable oil. give a little grated coconut, solidify. then pour a little dough up (not too full).
Steam for 15 minutes until cooked.
Purple sweet potato putu is ready to be served.
