This is the easiest cooking , the fish is fried in chili sauce with the spices already in the puree. Very simple but very tasty and become a favorite dish of children.
They will ask, "is today the mother cooking the tuna sauce"? Cooking dish of my children all.
In processing sambal tuna fish, of course we really need the main ingredient, the fish tengkuknya.Disini I use a very fresh tuna fish.
In looking for fresh tuna fish, I bought a fish whose eyes are still white and the gills are still fresh red, it's a very good fish sign.
Mackarel tuna
Medium-sized fish; maximum length of about 100 cm FL (fork length), but generally only about 60 cm. Metallic dark blue back, with elaborate skew patterns ranging from mid to back first dorsal fins; the sides of the body and the silvery white belly, with distinctive dark patches between pectoral fins and abdominal fins, which are not always present. Without scales, except in the area of corselet and side lines.
Small teeth and conical, in a row. The filter comb is 29-34 in the first gill arch. The first dorsal fin with XI to XIV hard fingers is separated from the second dorsal fin by only a narrow slit, which is narrower than the width of the eye. The spikes at the beginning of the first dorsal fin are much longer than the thorns behind them, making the top edges of the front fins curve deep. The pectoral fins are short, the edges do not reach the gap between the two dorsal fins. There are two bulges (flaps) between the two abdominal fins. Fins (finlet) 8-10 pieces behind the second dorsal fin, and 6-8 pieces behind the anal fin.

Utilization of tuna
Tongkol is an important fisherman fish catch in various countries in its area of distribution. Most como traps were arrested in the Philippines, Malaysia and Pakistan; while in India these fish occupy an important position. The world's fish production (from 8 countries) from 1975 to 1981 ranged from 44 to 65 thousand tons per year, with a spike of up to 84,000 tons in 1977. While between 1990 and 1995, FAO Fisheries Statistics recorded an annual production figure of 90,987 up to 111,996 tons. Some of the important tuna landing ports in Indonesia, among them, are Manado, Padang, Cilacap, Tegal, and Sumenep.
These fish are generally caught mixed with other types. The fishing gear used primarily is the gill net, and also the tonda fishing line. Sometimes these fish are also obtained through the operation of seine trawl or longline fishing.
Casks are served in the form of fresh fish, frozen fish, and canned. Also in any kind of processed fish: dried, salted, smoked, or dipindang. The meat is of good quality when fresh, but it quickly gets worse if it is not handled properly.
Then we need red onionsa
In addition to spices, red onions can also be used various diseases such as disease,
- Cancer Prevention
Allium vegetables have been studied extensively in conjunction with cancer, particularly stomach and colorectal cancer. The beneficial effects of onion, tend to be due to some of their rich organosulfur compounds. Although the exact mechanism by which these compounds inhibit cancer is unknown. But some hypotheses allow inhibition of tumor growth and mutagenesis.
Onions are also a source of vitamin C as an antioxidant and help to combat the formation of free radicals that are known to cause cancer.
- Prostate Cancer
In a study published by the Journal of the National Cancer Institute, the researchers used a population-based, controlled case study to investigate the relationship between vegetable allium intake and prostate cancer. They found that men with the highest intake of vegetable allium had the lowest risk of prostate cancer.
- Esophagus and stomach cancer
Allium intake in vegetables is inversely proportional to the risk of stomach cancer. Several human-based survey studies have demonstrated the potential protective effect of alliums consumption, as well as reports of tumor inhibition after administration of allium compounds in experimental animals.
- Sets Sleep and Mood
Folate found in onions, can help depression by preventing excess homocysteine from forming in the body, which can prevent blood and other nutrients to reach the brain. Homocysteine affects the production of serotonin, dopamine, and norepinephrine hormones, which regulate not only mood, but also sleep and appetite well.
- Good For Heart
The content of methylallyl sulfide and amino acid sulfur in onion, gives a decreasing effect on bad cholesterol levels in the blood and an increase in good cholesterol levels. Benefits of garlic also control high blood pressure and open clogged arteries, so as to improve heart health.
Red chili
Big red chili (Capsicum annuum L.) is one type of vegetables that have high economic value. Chili contains a variety of compounds that are useful for human health. [1]. Sun et al. (2007) reported that chili contains antioxidants that serve to keep the body from free radical attack. The greatest content of this antioxidant is on green chili. Chili also contains Lasparaginase and Capsaicin which act as anticancer substances (Kilham 2006; Bano & Sivaramakrishnan 1980).
Chili (Capsicum annum L) is one of the most widely grown vegetable commodities in Indonesia because it has a high selling price [2] and has several health benefits, one of which is the capsaicin substance that functions in controlling cancer. In addition, vitamin C content is high enough in chili to meet daily needs of everyone, but should be consumed sufficiently to avoid stomach pain.
