Food Fight Friday pre christmas
I did an easy vegan sloppy joe, a staple of my familys gatherings. A vegan creamy potato salad and salad with vegan ranch. maybe a bit to much creamy goodness, but why not.
Sloppy Joe Vegan Try
Fake ground beef
2 cabana peppers
2 jalapeno peppers
1 1/2 cups tomato sauce
1/2 cup bbq sauce
1/3 cup Caribbean jerk sauce
Vegan ranch Is super easy
Simply drain the water and only use heavy part from canned coconut milk. Whip with ranch seasonings packet. I used this for base of potato salad and for dressing for salad.
Potato Salad
Simply boil diced potatoes til soft, then drain. I took 1 cubana pepper and 1 small white onion and placed them in same pot I boiled potatoes. Turning off heat to give them a quick sear. Then tossed potatoes, vegan ranch and onions and pepper together. Put in frig for 2 hours before serving.
If I were up north with family there would be more sides, more food and no left overs. Here there is lots of left overs but no dead animals. So vegans enjoy.

That potato salad looks awesome, but what is the fake ground meat?
Have you always been vegan?
We don't eat a ton of red meat, we enjoy fish and seafood mostly, and chicken sometimes, but always lots of veggies and salads, nuts and seeds.
But, when it's time to cook prime rib for Christmas dinner, the fans are cheering.
