There are only three constants in the universe:
Death, Taxes, Evolution into crustacean
Human seem to be the only outlier, but not for the reason many think of. -- Anon Guest
Human fiction has played with the notion since before the Shattering. Someone capable of taking aspects from various beasts attempts to create the most dangerous being possible. The beast that emerges is, of course, a Human. Someone capable of messing with evolution concocts the ultimate form of life and gets... a crab.
Crabs have evolved thousands of times on thousands of planets. They're a sensible form for an amphibian with an exoskeleton. Some might say 'design', but there is little in the way of evidence for a single designer of the known universe.
But this is not about theology.
This is about Humans and their innate need for defiance.
"Death defying" is a frequent descriptor of Humanity's love of showing off. Further, Humans have evidently resisted evolving into crabs. They've made it this far. That said, they have made shells for themselves out of mineral resources. They have yet to become hexapodal but not everybody can win everything.
As for defying taxes... several attempts have been made since the dawn of history. Society needs funds to operate, doing all the things that no individual wants to pay for themselves. Taxes are the means by which the little things are paid for. Most of the time. People expect the little things and think they cost nothing... until the society runs out of tax money.
Then all the overlooked people can't be paid to do the jobs nobody wants, and things very quickly fall to pieces.
Humanity has derived a means to live forever with technological assistance. They have managed to find a way to put themselves in hard shells and survive in aqueous environments.
They cannot, no matter what they do, avoid taxes.
