Healthy Recipe - Cauliflower “Fried Rice”

Guys. You know I LOVE cauliflower.

It can be made into SO many different things, and I wanted to share with you one of my favorite recipes that’s super easy and so tasty!

This is my take on cauliflower “fried rice” - it may not be exactly traditional per se, but it’s delicious, easy, and you only have to get one pan dirty to make it… Fewer dishes? I’ll take it!

What you need:

1 pound 96/4 extra lean ground beef
3 eggs (or 6 egg whites)
1 package (12 ounces or so) broccoli slaw
2-3 packages (12 ounces) cauliflower rice
Soy sauce
Rice vinegar
Splenda or other no-calorie sweetener
Sriracha (hot chili sauce) or sambal oelek
Garlic powder
Onion powder
Ginger, fresh or ground
Green onions, sliced

What to do:

I like to heat a large, deep skillet, spray a little cooking spray into it and add the ground beef. I season it with garlic powder, onion powder, and a tiny bit of salt (soy sauce is super salty so you won't need much salt here). Cook the beef until no longer pink, or desired doneness.

While the beef is cooking, mix up your sauce - these amounts can be changed to taste, and I usually taste as I go and make adjustments as needed. My usual amounts are around 5 tbsp soy sauce, 2 tbsp vinegar, 1 tbsp Sriracha or 1 1/2 tbsp sambal, 1 tbsp Splenda, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 tsp ginger (more if fresh). Mix it up and heat it in the microwave for 10 seconds or so before tasting, then adjust.

Remove the beef from the pan and set aside. In the same pan, scramble the eggs or egg whites. When fully cooked, remove from the pan and set aside.

Scrape any remaining egg from the bottom of the pan and discard. Spray with cooking spray again and add the broccoli slaw, cook for 2-3 minutes. Add the cauliflower rice and continue cooking until barely softened.

Add back in the beef and egg, pour the sauce over everything, and stir to mix.

Cook everything together with the sauce until the cauliflower rice is tender and the sauce is fragrant. Stir in some of your green onions and you’re done!

Serve with more green onions and Sriracha for garnish :)

This is such a hearty, delicious, and low carb way to get your fried rice fix - not to mention your lean protein and veggies all in one dish!

This doesn’t have much fat or very many carbs in it, so if you need more of those in your life feel free to add them in - you could use higher fat beef and whole eggs, or a little butter or coconut oil would be tasty for fats, and you could add some peas for some tasty vegetable carbs :)

Very healthy diet and a bonus to any keto recipe or who are looking for some low carb healthy and delicious meal. I just have a question, do you microwave your grated cauliflower or heat it in a pan to make cauliflower rice?

Yes, totally - it's the best!! So versatile and delicious, and fits almost every eating plan I can think of :) and I think you could cook it either way, but I prefer to do it in a pan so it gets a little bit of color :)

Hmm I love fried cauliflower. So much better than the normal fried rice. Staple food at our home. But then without the meat and eggs ;)
