Finally having a small break in the heat. It’s now rainy and gloomy! 🙂🙃 Best days to snuggle under the blankets and hit Netflix/chill.
My little family loves soups and I haven’t made any in a while. So I decided to throw this together last minute. It’s so yummy! And if you can handle noodles you could toss those in as well!
Ingredients:
- 64oz of Chicken broth
- 1lb chicken breast
- 2 carrots
- 2 celery sticks
- green onion to taste or you can use a medium onion
- 2 garlic cloves
- 1 green zucchini
- 2 yellow squash
- basil leaves
- thyme leaves
- oregano leaves
Directions:
- wash and dice up all the veggies. (For my zunoodles I used my vegetable noodle machine.) Throw into a pot.
- pour broth into same pot as veggies add spices.
- while broth is simmering; cook chicken in separate pan. (I bake mine then add too broth mix) some cook chicken in broth then add veggies later. Either way works :)
- after you’ve added the chicken to broth mix let it come to a boil. Shut off. I let mine sit for a few minutes then serve.
- kiddos enjoy with grilled cheese!

Soup! The ultimate rainy day food! I so miss having carrot in soup, but it's a major allergen here, so it's a no-no. Those noodles look great!

Thankfully there's no allergies to vegetables or fruits, knock on wood, here. That would be a tough one here since we really love those!
