This looks very good. I think I will try making my own on the weekend. I always wonder how others eat it. I don't like to leave the meat in for more than one or two waves "shabu shabu". I guess it depends on beef quality and that looks top notch!

Yup, 2 waves is the right way and yes, the beef was awesome. As for the pork and chicken, I thought it was safer to leave them in a little longer.
