Handed down from my Dad, this is one of my favorite recipes of all time. It is absolutely delicious and the best part is that there is no need to add any extra time to marinate. It is also very simple to make and uses few ingredients. Give it a try, you will thank me later.
1 boneless pork shoulder (around 2.5 lbs)
3/4 c soy sauce (Kikkoman's Regular tastes best)
1 c + 2 tbsp white vinegar
4 tbsp granulated sugar
4 large bay leaves
8-10 cloves garlic (minced)
10-15 black pepper corns
Cooking Instructions:
In a large heavy bottomed pot, mix soy sauce, vinegar, minced garlic, sugar, pepper corns, and bay leaves until the sugar is dissolved. Cut the pork shoulder into 1 to 2 inch cubes and add to the pot. Pork shoulder can be very fatty at times. Feel free to discard any large pieces of fat, but leave most of it as it will render out and add depth to the dish.
Mix the pork into the cooking liquid and place on medium heat. Once it has reached a boil, reduce heat and simmer for up to 1 hour (stir occasionally). Hopefully, there with be enough of the cooking liquid left to spoon over the top of your adobo and rice.
Serve with steamed rice, fried noodles, or by itself.
I prefer mine topped with sliced green onion, sriracha sauce, and a drizzle of sesame oil.
