Kidney Bean Apple Salad (simple, healthy and vegan)

Hey foodies!

Today, I want to share another quick, easy, delicious and healthy recipe that's perfect for lunchtime at work. It's a variation of my previous shared Lentil Apple Salad. I used kidney beans instead of lentils. They also go really well together with apples. Kidney Bean Apple Salad

Ingredients

(for 2 main servings and 4 side servings)

  • 500 g kidney beans, canned
  • 1 big apple (granny smith works the best)
  • 1 onion
  • 2 gloves of garlic
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp liquid sweetener (I used fiber syrup)
  • 2 tbsp parsely, fresh
  • salt & pepper

Directions

  1. Rinse and drain the canned kidney beans.
  2. Chop the apple and the onion. Mince the garlic.
  3. Combine everything in a bowl.
  4. Season with salt and pepper. Mix together. Enjoy!
