I think yours looks better, I'll try it this way next time. Btw, yellow mustard + fruit marmalade (apricot works best) makes a great dip for Coconut Shrimp!

Beautiful Coconut shrimp, so good.They actually look way better and more colorful baked and I bet they taste better with out the grease. I feel like greasy food makes me feel sick now that I am older.
