Fresh, delicious, light and packed with amazing flavor coming for the freshest whole foods. I hope you are all hungry for a healthy, antioxidant-rich salad, 'cause that's what's on the menu today.
Arugula is by far my most favorite salad. Though many people don't fall for its peppery, spicy taste, we love it! It is packed with so much plant goodness.... and compared with other lettuce variations, arugula actually has some flavor hehe.
No really, I always thought salads were boring until I discovered a few salad flavor hacks such as arugula, peanut butter dressing, avocado, seeds, nuts, and so much more wonderful plant-foods that add crunch, color and flavor.
And the salads freshness was more than welcome on this hot tropical day. All the refreshing popsicles I made the other day are gone, but that's a good excuse to make some more!!! I know I know, it's more a kid's snack, but what the heck grown ups can be popsicle lovers too ;) I sure am! And I love it!

Ingredients (serves 2)
For the balsamic vinaigrette
1/2 orange, juice only
1 tbsp balsamic vinegar
2 tbsp extra-virgin olive oil
Black pepper and sea salt to taste
For the salad
3-4 cups packed arugula (rocket lettuce)
1 cup raw red beet, julienned
1/4 cup finely chopped spring onion
1/2 cup halved cherry tomatoes
1 orange, peeled, segmented and chopped into bite-size pieces
2-4 tbsp pumpkin or sunflower seeds (or other seeds or nuts of your choice), raw or toasted
Directions
- In a small bowl, whisk together all vinaigrette ingredients. Set aside.
- In a large salad bowl, combine all salad ingredients, except arugula. Toss to combine.
- Add arugula to plates or bowl and top with salad mix. Drizzle with a vinaigrette and top with seeds or nuts of your choice.

Those are my favorite too. The arugula coupled with cherry tomatoes and im good to go! Well, i would take it with vinaigrette without complaining too. ;)

You know, I have never been a huge fan of arrugula or beets. But I could imagine the taste of this salad by just looking at it and seeing the ingredients, and I bet it would be a great way to try to ease into liking both, making the beets into small bits like that with the contrast of that vinaigrette sounds actually really delicious. Not to mention that it looks beautiful to the eyes.
As a beet and arugula lover I'm biased of course. but it was so delicious. Give it a try... who knows it turns you into a red beet and arugula lover hehe. have a great night my friend.
Aragula aka Sweet or Wild Rocket is awesome, and I am so lucky they grow like weeds once you have an established bed. I let the most of the first batch of plants go to seed (about 6 years ago) and have never had to plant again since. Fresh aragula available 365 days a year...100% organic and free.

Hmm that's a hard question. I would say peanut butter dressing or avocado dressing. Though I love balsamic based dressings too. Thanks for your comment ;)

I always bring home a lot of aragula when I visit my brother in law's greenhouse! I just love making pesto with them also! Their peppery taste is just amazing!

I have never tried basalmic vinegar with orange before! I am going to try this out. What's the difference between orange and lemon? Have you tried that?

Though oranges and lemons are both citrus fruits and great to use in dressing and vinaigrettes, lemon is sour and orange sweeter. Have a great day.

I think I will have to try this - I have a few beets I'm not sure what to do with and this looks sooooooooper scrummy! I used to think the same as you - that salads were pretty dull, but actually they're the most exciting meals I eat these days due to the wonderful variety of beautiful ingredients with all their flavours, textures, colours... plus the best thing is my body actually feels nourished afterwards! I think pickled beetroot put me off them for most of my life... until a couple years back when I discovered how lovely fresh beets are. I think smoothies are my favourite way to consume them... I love the bright colour and if mixed with banana or mango or something like that, it's like some kind of delicious summer berry drink! But I still need to do a lot more experimenting with them... which is why I always check out your recipes featuring beets!
