GREEN SMOOTHIE OF THE DAY: Tropical Carrot Top Smoothie 🍌🌴πŸ₯•

In the past, there was widespread belief that carrot tops were toxic due to their bitter flavor. As it seems humans tend to associate bitterness with toxicity. Given their versatile nature and nutritional profile many people are beginning to utilize these greens in their cooking.

Instead of tossing the leafy green carrot tops into the bin or compost pile, why not try to blend them up instead? Sounds weird? I get you I wasn't too sure about adding carrot greens either when I first tried them out. But they are so good for you and when added in moderation in combination with sweet fruits they will not ruin the taste of your smoothie.

Carrot tops are rich in vitamins and minerals, like potassium, iron, and calcium. They also contain protein, dietary fiber, 6 times more vitamin C of carrots, no fat or cholesterol, vitamin K and various phenolic compounds and carotenoids, along with trace amounts of other antioxidants beneficial to our health.

WARNING: be sure to use organic tops to avoid contamination from pesticides and other nasty chemicals used in agriculture.

Tropical Carrot Top Smoothie 🍌🌴πŸ₯•

Ingredients


1.5 cups fresh spinach, packed
2 carrots + carrot tops (if too bitter or green tasting for you add more spinach instead of the carrot tops)
1 cup pineapple chunks
1 cup mango chunks
1 banana, frozen and chunked for extra creaminess
2 cups water
2 tbsp extra virgin coconut oil
Optional topping: hemp hearts

Directions


  1. Blend spinach, carrot tops, and water until smooth. Add remaining ingredients, and blend again. If the smoothie is too thick, add more water and blend again until smooth. If you have a high-speed blender you can throw in everything at once.
  2. Optional: Top with hemp hearts or other superfoods/toppings you like.

Poor carrot tops, getting such a bad rep, just for having those bitter alkaloids! It is important to remember that while its not so serious that people are keeling over around the salad bar, but each green leafy has its own alkaloid and serious overeating of any one can turn into a problem. A part of me says, no problem, I have grown to love all greens...but I think I'm probably 15% spinach at any one time. A good reminder to pull out those seaweed snacks for tomorrow!

I like to add carrot tops when I throw carrots in a soup as well. I use it similarly to parsley. I will have to try a smoothie soon!

Has to be serious overeating to create issues. To get any effect you have to eat bunches of kale, spinach or other leafy greens. No need to fear the greens hehe. Never added them to soups. Great idea. Thanks for sharing!

I like carrot tops, for sure! Even from the Wild carrot (Daucus carota), also called the Queen Anne's Lace. Really, every part of a carrot - in the garden or wild - is good. The flower stalk has a nice core inside, but it's more for a snack because it's not very big, lol. And the flowers and the seeds, too. You have such a wide variety of smoothies! :D

Use carrot tops you say? Hmm... I honestly don't know why I have this eww thought going through my mind. I managed to convince myself to throw the tops of the beats into the juicer so why not carrot tops... this is an interesting psychological dilemma you've brought to my attention Amy :) Beautiful photos by the way as always

Haha.... you a fear of greens. Really? Just don't add too much and always combine with ripe sweet fruits to mask the bitterness.

Haha I know right? It's crazy... but it's only with tops of things.. I'm working on it :) I'll let you know though, carrots are rare at our organic market and they don't sell them with the heads, same for beats.. once my own start to grow, I'll definitely try <3
