I love berries and homemade coconut yogurt. While most days we have a green smoothie for breakfast, yogurt parfaits are a regular at our home too. They are easy and can be made the day before. The ideal breakfast on-the-go for those busy mornings.
Ingredients
1.5 cup plain unsweetened coconut yogurt, homemade or store-bought
1/2 cup old-fashioned rolled oats, yummy with granola or steel-cut oats too
1/2 teaspoon ground cinnamon, or to taste
2 teaspoons chia seeds
1 cup fresh raspberries
1 cup fresh strawberries

Instructions
- Combine the yogurt, oats, chia seeds, and cinnamon. Layer half of the yogurt-oat mixture in a Mason jar or container.
Add half the berries and layer with remaining yogurt then the berries. - Eat straight away or refrigerate overnight. Delicious either way.
Recipe Notes
If you don’t have fresh berries available, mixed frozen berries work too.
