Goodmorning steemit. My weekend has just started with these delicious power chia puddings. A perfect treat on this rainy day. According to our local weatherman, this rainy season is a particularly tough one. We hadn't had a single dry day since the 3rd of July.
At least there are no water shortages, but too much water is treating the rice planting and harvest. And no rice will mean hunger nationwide. Let's cross fingers the rains get a little less soon.
But let's talk happy things. We have nothing planned this weekend and I am heading to the market soon to stock up and spend some time in the kitchen and on steemit. Sounds like a lovely weekend to me.

MANGO PASSION FRUIT CHIA PUDDING WITH HOMEMADE COCONUT YOGURT
INGREDIENTS (serves 2)
1 cup unsweetened almond milk
4 tbsp chia seeds
0.5-1 tsp vanilla extract
2 cups mangoes
2 passion fruits centers scooped out with a spoon
1/2 cup plain unsweetened coconut yogurt
DIRECTIONS
Mix the chia seeds, vanilla, and almond milk in a bowl. Refrigerate overnight. The first hour you may want to stir the mix occasionally to stop it from clumping – add more almond milk if needed.
Remove from the fridge after it has set and spoon the mixture into a medium sized jar or glass.
Blend the mango chunks until smooth. Spoon into the jar, layering it on top of the chia pudding.
Spoon the yogurt on top of the mango layer and top with the passion fruit flesh.
Eat right away or keep refrigerated.

Don't you just love making your own coconut yogurt? I can't believe i haven't been doing that all along. Love this chia pudding, I have a couple of mangoes in the fridge that are calling my name, looks like I just found the answer! btw..so far this hurricane season has been ok...its early yet but lets cross our fingers. Thanks dear. Luckily we are protected here in the bay of Thailand from big typhoons and storms but we get all the rain hehe. Parts of Vietnam and Thailand are less lucky. Have a lovely day!
