Already lunchtime on my side of the world. And that means a yummy lunch salad. The more colors the better, hence this colorful rainbow salad to boost our health... and it's super yum too.

Especially when combined with a peanut dressing made with homemade peanut butter. I was never a huge fan, but oh boy the first spoon of homemade peanut butter was love at first bite.

Rainbow Quinoa Salad with Homemade Spicy Peanut Butter Dressing

Ingredients (serves 2 to 3 people)


For the salad


1/2 cup uncooked quinoa (any color, we used red quinoa)
3/4 cup grated carrot
3/4 cup diced cucumber
1.5 cups shredded purple cabbage
1/3 cup finely chopped spring onion
Β½ cup chopped fresh cilantro or parsley
ΒΌ cup thinly sliced green onion
ΒΌ cup roasted sunflower seeds

For the peanut butter dressing


3 tbsp peanut butter (we used homemade)
1 tsp grated fresh ginger
2 tablespoons tamari or soy sauce
2 tsp maple syrup
2 tsp apple cider vinegar
1/2 tsp toasted sesame oil
Squeeze of lime or lemon
Finely chopped Thai chili peppers or chili paste to taste

Directions


  1. Cook quinoa according to the instructions on the package. This will take approx 20 min.
  2. Meanwhile, combine the peanut sauce ingredients in a small bowl. Whisk together until smooth. Add a little water if needed. You can use a small blender too.
  3. In a large bowl, combine all salad ingredients and the cooked quinoa. Toss to combine.
  4. Divide the salad over plates or bowls and drizzle with peanut sauce.

Another beautiful bowl of goodness! As much as I love any nut butter, I somehow have not made homemade peanut butter. I definitely need to rectify that soon! I have gotten it fresh-ground from the store, but there's just something that makes it taste even better when you take the time yourself. And even better when mixed with ginger and soy sauce to make a delicious dressing. It's breakfast time here, but I would absolutely love some of that right now! πŸ˜ƒ

Nope bought it in Sakura.. a Japenese recycle shop. The place I actually buy all my bowls, plates, glasses, etc.
