Raw Vegan "Cheesy" Alfredo Zoodles (+ what the heck is nutritional yeast)

The perfect refreshing, “cheesy” summer lunch salad. A delicious, healthy twist on the classic Alfredo fettuccine. Though I say raw, I used toasted pine nuts, so its 99 percent raw. But I just love toasted pine nuts. If you are a 100 percent raw foodist, you can add raw pine nuts or another other soaked and dried nut you like.

What is Nutritional Yeast?


Today, I want to present another superfood that helped me a lot on my journey towards living a plant-based lifestyle: NUTRITIONAL YEAST. Despite its unappetizing name, nutritional yeast flakes may be one of the best additions to your diet. It is popular with vegans and vegetarians and may be used as an ingredient in recipes or as a condiment to add a "cheesy" flavor.

These versatile Parmesan-like tasting flakes can be added to sauces, dressings, pasta, and everything else that needs a cheesy finishing touch. We often use it as a substitute for cheese in sauces (Alfredo or Mac & Cheese) because of its creamy, nutty, and cheesy flavor. But some people add it as a savory garnish for popcorn.

Nutritional yeast is a wonderful, nutrient-rich addition to your diet. One tablespoon packs 5 grams of protein and 3 grams of fiber. Other than that, it is a great source of essential vitamins and minerals, inlcuding B-vitamins like B1 (thiamin), B2 (riboflavin), B3 (niacin), B6 (pyridoxine), and B12 (folate). Furthermore, it also has a good amount zinc, manganese, copper, iron, and magnesium. It is gluten-free, low in fat, and low in sodium.

Raw Vegan "Cheesy" Alfredo Zoodles


Ingredients

For the zucchini pasta

2 zucchinis, spiralized
1/3 cup spring onion (scallion) chopped
1/4 cup pine nuts raw or toasted
For the Alfredo sauce
3/4 cup raw unsalted cashew nuts soaked for at least 1 hour
2 clove garlic minced
3-4 tbsp nutritional yeast or Parmesan cheese
1/2 cup unsweetened coconut milk
1/2 cup fresh basil leaves
1/3 cup fresh chives or parsley or to taste
1/2 lime or lemon juice only (use less if using lemon)
black pepper to taste
sea salt to taste

Directions

  1. Soak cashew nuts for at least 4 hours in water. Overnight is best. The longer you soak them the creamier the cashew cheese.
  2. Spiralize the zucchini with a spiralizer, hand spiralizer or julienne peeler.
  3. Toast pine nuts until golden in a dry pan (optional)
  4. Combine all Alfredo sauce ingredients in a blender or food processor. Process until smooth creamy, “cheesy” sauce. Add a little bit more coconut milk or water if needed.
  5. Add spiralized zoodles (or zucchini noodles) to a bowl or plate, top with Alfredo sauce, spring onions and pine nuts.

I've never tried a vegan alfredo, but now I've got too. I've got a friends recipe that's similar to this. :)

It is delish. I'm sure you'll love it! Vegan mac and cheese with similar sauce is amazing too. Often add cauliflower to the sauce too. Yum!

I love nutritional yeast! There are so many possible applications, it tastes great and it has so many nutrients in it. Perfect for vegetarians or vegans but also omnivores in my opinion. Great job @amy-goodrich, to include information on nutritional yeast in this recipe post! :)
