HEALTHY PLANT-BASED LUNCH |HERB ROASTED CHICKPEA KALE SALAD WITH GARLICKY DRESSING

Chickpeas are a staple at our home. Not only because they provide us plant protein, but they are so yummylicious. Especially when roasted with my favorite herbs. This time I used garam masala, turmeric powder, dried oregano, sea salt and black Kampot pepper!

Depending on how much time you have you can pan or oven roast them. Pan method is my quick version. When I have the time I always prefer the oven roasting though as the chickpeas come out extra crunchy. Just the way I love them.

Since I had time to do some roasting I roasted a whole head of garlic too to make a dressing. For the dressing, I used the roasted garlic, lime, maple syrup, almond yogurt (soy works too but I can't eat soy as it messes with my hormones), olive oil and a little salt and pepper.

And that was it. Just roast the chickpeas and garlic, make the dressing and serve with some shredded kale! I used Chinese kale but any kale or other green you like will make a yummy lunch salad!

This looks so inviting! When you roast the chickpeas do you toss with olive oil as well as the spices? How long do you roast? I love chickpeas but haven't done anything too creative with them. I would love to try this! Well done!

You should give it a try. Roasted chickpeas are my fav. When I have time I prefer the oven method (adds extra crunch) which will take about 15-20 minutes. Add chickpeas, oil (I use coconut oil or olive), and herbs to baking sheet. Toss to coat and roast until crisp. Pan method only takes a few minutes. Make sure the chickpeas are well dried. Use paper towel if needed to pad dry. Add chickpeas to the hot pan with oil. They should sizzle as soon as they hit the pan. Let them roast lightly, before adding the spice mix. Stir regularly so that they don’t burn. Then add the herbs and mix to coat. Remove from the heat and finish the roasting of the spices in the hot pan, tossing them around the pan. Hope you try them one day. They are so good.

Oh you know what, I did exactly this for lunch yesterday, these roasted chickpeas were the toppings on my vegan mac-n-cheese! So amazing taste, and I love to add a lot of garlic!!;)
