Ingredients.
- 1 shallot (finely chopped).
- 2 garlics (finely chopped).
- 2 tomatoes (cut into wedges).
- 2 lemongrass (cut into 2 inch pieces).
- 1 /2 fresh pineapples (cut into wedges).
- 2 tablespoon tamarind pulps.
- 2 cup of water.
- 400 grams of shrimp.
- 4 okras (cut into pieces).
- Sugar, Asian fish sauce, salt, coriander and green onions.
Instructions.
Break off tamarind from brick and soak in 1/3 cup warm water 30 minutes, then push through a sieve and discard solids.
Heat oil in a large pan over high heat, add shallots, garlics and fry well for about 2 minutes till golden. Add more tomatoes, lemongrass, pineapples and tamarind liquid. Stir fry well for about 1 minute. Add water and 1 teaspoon sugar, 1 teaspoon salt, bring to a boil, cover.
Simmer for about 5 minutes, add okras and shrimps. Cook just till shrimps curl (for about 1-2 minutes). Season 2 tablepspoons fish sauce. Garnish with green onion and coriander. Serve hot.
