π₯ I used Free Range Hen Eggs. I rotate my Eggs between hen and duck. They both have their own nutritional merits.

4 Eggs
30g Wild Rocket
60g Asparagus
50g Tomatoes
40g Blueberries
50g Radishes
30g Avocado
1 tsp Ghee
1 tsp EV Olive Oil or more if you want

- Whisk eggs. Heat wide saucepan to med, add ghee. Allow to melt, add the eggs!
- Allow to slowly set slightly & folding in the sides, allowing any egg mix to flow into gaps. Cook until top just set, approx 3mins, turn heat off
- Steam asparagus for 2-3 Mins. I do not use or own a microwave! Some Studies show they donβt effect nutrients but I disagree!
- In a large bowl, mix all the veg + berries & add on to plate.
- Fold the omelette over & add to plate.
- Slice up an Avocado & Happy Days!
