Looks great. I've never seen it done this way before. We make it with lemon, tarragon, garlic and about ten pounds of butter. :) I haven't had trout in a couple years though. Too much pressure in the lakes around here.

I did the Lambs Quarters in butter this time, and have cooked a lot of fish like that before.
