4th Recipe - GRILLED BBQ CHICKEN TACOS - Amazingly Easy Recipe

Hello Again!

Since the summer season is here. We all know that vacations are the best time for grilling and going bar b q and when I think of easy, healthy, yummy summer dinners my first thought goes to grilling.

The recipe I am going to share is quite easy and exceptionally tasty. Its a full of protein and health recipe. Its called "GRILLED BBQ CHICKEN TACOS". I lately, got to know about it!

Juicy grilled chicken smothered in BBQ sauce plus creamy, crunchy, fresh coleslaw makes these the easiest and tastiest Grilled BBQ Chicken Tacos you’ll ever have!

Ingredients

  • Grilled Chicken - 1 pound ( boneless skinless chicken breasts)
  • Water (2-4 cups) + salt 2 tbsp
  • BBQ Sauce - 1/4 - 1/3 cup
  • 1 1/2 cups pre-packaged coleslaw shredded cabbage
  • 1 1/2 cups shredded purple cabbage
  • Sliced Green Onions - 1 small bunch (just the white/light green part)
  • 1/2 cup Cilantro minced
  • BBQ Sauce
  • Garlic - 2 Coves
  • Olive Oil - 1 tbsp
  • Lime * 2 Tbsp
  • 1/2 avocado
  • 1/4 cup non fat plain greek yogurt
  • Salt and pepper to taste

Additional

  • Crumbed cotija/feta
  • Taco sized tortillas

Instructions

In order to make GRILLED BBQ CHICKEN TACOS, first of all place chicken breasts in a large bowl. Cover it with 2 cups of water and 2 tablespoons salt for 15 minutes. Afterwards, remove from brine, rinse, and pat dry.

Grilling begins now!

Pre-heat grill at medium high (400 degrees F) for 10 minutes.

Once hot, carefully oil the grates and place chicken on the grill and grill for 5-8 minutes. Flip the chicken and cook it for additional 5-8 minutes. In the last minute of cook time, brush chicken with BBQ sauce.

In the meanwhile,mix coleslaw, cabbage, green onions, and cilantro in a large bowl.

For Sauce Preparation: In a food processor, combine avocado, greek yogurt, lime, garlic, and olive oil. and pulse together until smooth. and season with salt and pepper.

Finally,
Fill tortillas with chicken, slaw, and top with crumbled cotija or feta. Serve it with chilli ketchup and Enjoy!

With the above mentioned quantities 6 tacos can be prepared within 30 minutes (15 min prep time and 15 min cooking time)
