In an unfortunate set of circumstances I am currently under the weather. As such, I found it expedient to load up on nutrient dense foods. What I discovered may surpirse you.
Soup is the one dish that does not kill off the nutrients in food.
Traditionally, when you fry or grill a dish the liquids within an ingredient will dehydrate from the heat being applied to it. For example; when a mushroom is fried it releases its juices. This is called bleeding. When this occurs the liquid within the base ingredient takes the nutrients out from within it. And, depending on how long you cook it, will completely evaporate and essentially eviscerate the nutrients from the dish. This is not the case with soup, as the nutrients will absorb into the broth of the soup. In turn, soup broth is literally littered with helpful nutrients. Grew for cold and flu season remedy.
It can aid with weight loss.
The stomach sends signals to the brain when it is full by individual stretching of the stomach fibers. The stomach muscle expands when full giving the sensation that triggers your brain that you are now satisfied. Soup, being mainly water based, mimics that full feeling by giving the stomach the feeling from the broth that fills the stomach to the brim. Just as drinking water can help curb appetite. Soup can mimic the full feeling while proving to deliver nutrients.
The nutrients in soup absorb more efficiently.
Essentially, any nutrient that is water based is quickly absorbed by the body as it does not need to break it down from its initial substance. Be that a protein or vitamin from a fruit or vegetable; it is more readily absorbed if prepared in a soup as the nutrients steeped in the broth act as a catalyst for faster nutrient absorption. Think of it as instead of taking a pill, you drink the medicine directly. It’s simply easier for your body to process the nutrients faster.
It is anti inflammatory.
Inflammation is an issue especially in today’s society. Little is it known that a variety of diseases including cancer thrives off of excessive inflammation. Inflammation is a natural response by the body to help combat stress. In essence, it is a good thing as it stimulates tissue for repair purposes and white blood cells to attack invasive substances in the body such as bacteria. However, too much of a good thing is harmful. Because stress in today’s society is almost absolute- excessive inflammation is commonplace among the majority of people in the United States in particular. According the the World Health Organization (this particular information was found on dailysuperfoodlove.com) heart disease, diabetes, arthritis, autoimmune disease, and Alzheimer’s have all been linked to people’s with excessive inflammation. Here’s a simple solution, eat more soups with plenty of vegetables. It’s an easy fix to excessive inflammation. And although inflammation is not the only cause for these ailments listed above, it doesn’t hurt either to keep it at a good norm.
It tastes good!
Must I say more? It tastes good and has obvious health benefits when prepared well. Essentially, it is a win win situation.
Turns out, you can have your cake and eat it too.... erm. I mean, soup.

I used to love eating soup when I was younger.... And then I tried McDonalds haha. so I am slowly getting back at it.

Great post. I like a bit of soup, especially in the winter. Is that Bouillabaisse in the picture? Fish broth is one of my favourite soups.
Its just a simple chicken soup with roasted tomatoes used as a base. I also added turmeric for it's many health properties. This soup I made to fight off a cold pretty much.
Oh nice. Good idea on the turmeric too. I could just eat that, with a little bit of cayenne pepper to give it some spice.

I read an article years ago that summarized a dietary study where they divided people who wanted to lose weight into three groups:
The first group ate a calorie restricted diet, with entree and a couple of sides, presented normally on a plate.
The second group ate precisely the same diet, but rather than having them on a plate, the same foods were cooked together into a soup.
The third group was the control group, and could eat what they wanted, with no restrictions.
The first group lost a small amount of weight.
The third group, with no restrictions, predictably lost little or no weight.
The second group, though, that ate their meals as soup, lost over twice as much weight as the group eating the exact same diet not made into soup. As you said, they digested the nutrients more completely, and with better hydration, the digestive system had less work to do overall.
Pretty cool! I've made LOTS of soups ever since, and am known among friends and family as the soup queen, since I love it so much. ;-)

That's awesome information!!! Yeah I really want to learn to cook more soups. I love Korean soups the most for sure. I can make a delicious clam chowder but that isn't the healthiest of options.
