Have you had your banana pancakes for breakfast yet?!
Weekend is my favourite time of the week and today is a perfect day to have a pancake day!
No need to rush in the morning, yet it's best to get up early to have a nice and productive day.
Yup, you read it right - productive!!!
Although it is a weekend, I still have lots of things to do around the house and lets not forget the food shopping...
Soo, today take some time and indulge yourself into this yummy and scrumptious goodness.
These can be made in so many different ways and therefore they never get boring!
How do you like your pancakes?
- With berries?
- Chocolate chips?
- Shredded coconut
I'd like to share with you the recipe for the coconut pancakes..........
Ohhh, I tell you, these taste amazing!
But this isn't going to happen today yet. Once I'll have it edited I'll share it.
Lets get to it!
Ingredients:
1 1/3 cup all-purpose gluten free flour
1 cup milk
3 eggs
1 tbsp brown sugar
dash of salt
1 tbs pure vanilla extract
2 tsp baking powder
1 tbs olive oil
fresh banana for topping
whipped cream for topping
dash of ground cinnamon
Maple syrup or light honey
Direction:
- Combine liquid ingredients in the bowl.
- Whisk them well.
- Next, add the dry ingredients
- Combine into nice batter
- Have a sliced banana on the side plate
You could mashed the banana and add to the batter if you like it this way.
Heat up the skillet and grease it lightly
Spoon the batter onto it by shopping small round cakes and place the slices of banana on top of them.
Cook them until you see the bubbles on top start to burs,
Next, flip them gently and cook until yo see this side to turn nicely golden brown.
You can sprinkle them with roasted almonds or simply ground cinnamon.
Try to make them yourself!
These are going to be your own unique Pancakes.
Always, you can alter the recipe to suit your own needs and desires :)
I love bananas and these look so delicious... but I've already had breakfast and lunch so maybe dinner!

We love pancakes. When our family gathers for an occasion pancakes are always served for breakfast. I think this idea will become a favourite with our grandchildren. Our older grandchildren are now involved in making the pancakes and I think they will love this.
I'm glad to heat that. I also think, it's a great idea to involve kids in food preparation. From my experience, they don't fuss as much while eating it... ;)
