These are THE BEST GLUTEN FREE meatballs ever!!!
Easy to digest, yet delicious, tasty and juicy.
And if by any chance your kids fuss about traditional meatballs in a tomato sauce these will do the trick.
So far, I've never heard any complain: meatballs again...?!
You can serve them with steam rice, build potatoes or even pasta (-:
Here is what you're going to need:
TO MAKE THE MEATBALLS:
- 1 kg of ground meat of your choice ( I buy a big chunk of meat and ask the butcher to mince it for me therefore I know exactly what I'm going to put in my stomach )
- 2 eggs
- salt and pepper to taste
- 3 teaspoons of gluten free all purpose flour
- 2 tablespoons of olive oil (later for browning the meatballs)
TO MAKE THE GRAVY:
- 3 cups of water
- 3-5 bay leafs
- salt, pepper to taste
- 2-4 cloves of garlic (depends how much you like garlic ;) I use about 6 cloves )
- 1 1/2 teaspoon of tapioca starch
- 2 tablespoons of white rice flour
DIRECTIONS:
Start by heating up 2 cups of water with salt, pepper, bay leafs and garlic until it boils.
In the mean time mix the meat with the remaining ingredients and make small balls.
Once the water boils, add the meatballs to the pot , cover it and continue to cook for about 10 min.
Remove the meatballs from the boiling water and place them in hot pan with 2 tablespoons of olive oil.
Do not discard the watery sauce. We're going to need it later to finish the gravy.
In the mean time mix the tapioca starch and the rice flour with the remaining 1 cup of water.
Golden the meat balls. Add water mixed with the flour and the remaining sauce.
Mix it well, cover and continue to simmer for about 15-20 more minutes
Once finished, you can serve them with steam rice, potatoes or even pasta (-:
