Happy Late St. Patrick’s Day!!!

I’ve always loved holidays, whether it be Christmas, Easter, etc.. A few weeks ago I learned that I have a lot of Irish in me. I became so excited that I started studying the Irish culture, also being engaged to someone who is Irish helps a lot. He told me that his favorite recipes to make on St. Patrick’s Day is Corn beef with cabbage, black eyed peas, and devils food cake. He has never cooked it before so I decided to surprise him. I couldn’t make it on St. Patrick’s Day because of work, so I waited and cooked it the day after. Here is my recipe for corn beef and cabbage.

Corn Beef and Cabbage

Ingredients:
Scissors
Knife
Large pan
Lid for the pan
Water
1 nice size Corn Beef from your local grocery store
1 head of fresh cabbage either from your garden or local grocery store

Recipe:
Cut the corn beef out of the package, get the seasoning packet that comes with it and place it on the side. Put the corn beef in the pan and fill it with water, until it covers it completely. Place the pan on the stove and cook it on high until it reaches a boil. When it reaches a boil empty the seasoning packet in with the corn beef, then turn your oven on low and place lid on pan to let it simmer. Let the meat cook for 2 hours and 30 minutes. After It has cooked for that long check to make sure it is completely cooked through and not rubbery. After your meat is done, cut up the cabbage then place it in the pan. Let it cook for an extra 30 minutes.

It can be served multiple ways, my personal favorite is to get two slices of potato bread, chopped onion, shredded cheese, and some thousand island and make a sandwich out of it.

This is how I eat mine.

I would post the recipe for the black eyes peas but mine didn’t turn out right. I didn’t cook mine long enough, so they were still really hard. Sorry!!!

When I was making the devils food cake I decided to make mine with Guinness. I will put on here how to make it with and without the alcohol. Here is my recipe for devils food cake.

Devils Food Cake

Ingredients:

  • Cake -

1 box Betty Crocker™ SuperMoist™ devil's food cake mix
1 1/4 cups stout beer (replace this with 1 1/4 of milk if you don’t want alcohol in it.)
1/3 cup vegetable oil
3 eggs

  • Chocolate Frosting -

oz semisweet baking chocolate, finely chopped
1 1/2
cups whipping cream
1/2
cup butter

Recipe:

Heat oven to 350°F (325°F for dark or nonstick pans). Grease the bottom of the pan you will be using, then Make cake batter as directed on box, using cake mix, beer ( or milk,) the oil and eggs. Pour about 1 1/2 cups batter into each pan.

Bake 18 to 22 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes before removing from the pan. Cool completely.

Meanwhile, for frosting, place chocolate in medium mixing bowl. In 2-quart saucepan, heat whipping cream and butter to just boiling over medium heat. Pour cream mixture over chocolate; stir with whisk until melted and smooth. Cover and refrigerate 1 hour; stir. Refrigerate about 1 to 1 1/2 hours more or until spreading consistency.

Take the icing out of the fridge and ice the cake how you want too. After you are done smothering the cake in icing it can be served!!
