[30-minute recipes for Ketodiet] Homemade pizza :D Do you want a bite?

Today, we made Margherita with buffalo mozzarella, organic tomato sauce and fresh basil.
Yum!

This amazing pizza is low-carb and gluten-free!
Unlike any regular pizza, It's so easy to make.

Ingredients:

For dough
170 g shredded/grated cheese mozzarella (semi-hard/mild cheese works fine too.)
85 g almond meal/flour
2 tbsp cream cheese or grass-fed butter (I prefer to use butter!)
1 egg
pinch salt to taste

For topping
Your favorite tomato sauce (I like Rao's marinara sauce)
Buffalo cheese
Fresh Basil
Anything you want can be optional like cherry tomatoes, olives, mushrooms, herbs etc

Instructions:

  1. Mix the shredded cheese and almond flour in a microwaveable bowl.
    Add the cream cheese or butter. Microwave on high for 1 minute.
    (If you don't have a microwave like me, you can do hot water bath instead.)
  2. Stir then microwave on high for another 30 seconds. Add egg, salt and any other ingredient you would like to add then mix gently.
  3. Place the mix in between 2 pieces of baking parchment paper and roll into a circular pizza shape. Remove the top baking paper/parchment. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or it will cook the egg.
  4. Make fork holes all over the pizza base to make sure it cooks evenly.
  5. Slide the baking paper with the pizza base, on a baking tray or pizza stone, and bake at 220C/425F for 12-15 minutes, or until it turns its color to brown.
  6. To make the base really crispy and sturdy, flip the pizza over (onto baking paper/parchment) once the top has browned.
  7. Once cooked, remove from the oven and add all the toppings you like.
    (If you add any meats, it should be already cooked.)
  8. Put it back into the oven just to heat up the toppings and melt the cheese. Bake again at 220C/425F for 5 minutes.
  9. It's ready now. Enjoy your pizza! :D

I've never heard of fathead pizza with butter before-- I'll have to give it a try!

You should make some of my chocolate chunk cookies for dessert. They're chewy like cookies are meant to be and they're only 1.3 net carbs each. You'll need a couple of weird ingredients, but they're worth it!
