Kaszotto = Kasza + Risotto
I can say that I fell in love with it, because it's soooo healthy! And in combination with these autumnal spices... Oh myy. I love grits and I have one in my daily diet. Lately I did little shopping and I bought 5 kilograms of Buckwheat, which I love. It taste the best with lentils of course! Hihihi π
And again I want to eat it as my dinner. My mouth is watering lol!
It's very filling dish thanks to buckwheat, which is not only good for our organism but also very nutritious. It also has long list of healthy benefits. But about that, maybe I will do another post devoted to grits. π
But, hey hey hey, without futher ado...
For preparing you will need:
- one glass of buckwheat
- two cups of veggie stock
- fresh mushrooms (I used boletus from my yard)
- one little pumpkin hokkaido
- chopped onion
- five crushed garlic cloves
- parsley
- two tbsp of coconut oil for frying
Spices (as much as you want)
- nutmeg
- dry lovage
- majoran
- pimento
- oregano
- lemon juice (two tbsp)
- salt&pepper
- ground pepper
Preparing
- into pot put coconut oil, add onion, fry it for 2-3 minutes and then add a half of crushed garlic
- add chopped hokkaido pumkin and mix it together
- add buckwheat and then veggie stock, mix it ane leave under cover for 10 minutes on small gass
- after that time, mix it gently and correctly, add spices and mix once again
- add spices, chopped parsley, rest of garlic and mix it together
- optional on top you can add walnuts and more parsley

You should try it! Some restaurants serve it, but with another vegetables, meat and some sauces. Where do you excatly going? :)

When I was little, I never really liked 'kasza'... but as we grow up, oir tastes become more refined. Not only that, but this preparation looks next-level awesome. I am going to add this to my recipe book(I just print out vegan recipes and keep them all in a duo tang) hope you don't mind?
