The best way to make pizza at home is to make it without complications, without rushing or worrying. It comes with the simplest ingredients. It just needs a bit of dedication.

In the kitchen, as in almost anything in life, we can get as complicated as we want, but it also happens the other way around. We can do things as simple as we want without sacrificing in final quality. One of the recipes that I like to do at home is the homemade pizza recipe, but homemade does not mean doing it in a way that does not deserve a place of honor at our table.

With pizza we can complicate everything we want. For example, we can make a pizza with a specific flour, or mixing flours. We can make the pizza with a cold fermentation, with several fermentations, we can add sourdough, or put a yeast or another. We can make the pizza with very elaborate tomato sauce, we can use stone for the oven, some ingredients or others, etc.

To give you an idea a pizza can be as complicated as we want and also everything simple. Today we decided to make a very simple pizza, with the idea that all of you can make it at home simply by following the steps and advice that we are going to give you here. Do you cheer up?

Ingredients
300 g flour
160 g of water
5 g of instant baker's yeast
20 g of extra virgin olive oil
1 teaspoon salt
200 g of tomato sauce
100 g of mozzarella

Step by step to make pizza
In a bowl we put all the ingredients of the dough: flour, water, yeast, oil and salt and mix well with a spoon. A pizza dough is like a simple bread. It can be done with any type of flour and the amount of water will be approximately half that of flour. If we use a flour with more gluten (strength flour) then we need more water and if we use a normal flour (like today) with half water (flour) and a little more will be enough.

Then we will knead. If we have a great mixer because we will not have to do much. If we do not have the only thing we will do is stretch the dough and pick with the palm of the hand to get a dough that does not stick to the hands or the table, it is a thin and elastic mass. Between 5 and 10 minutes will be more than enough. It will not be necessary to flour the table.

Next we will leave to ferment the covered mass. The goal is to double the volume. And that when it does? The answer is simple, if it is cold it will take longer than if it is hot. Or on the contrary, if it is hot it will take less. The best masses the longer they take better because the dough develops in a different way, but with our pizza without complications, it will not matter. We leave it and when it increases to double we will continue with the next step.

Now that our mass has grown enough we can continue. We take the dough and we degas it, that is, we knead it slightly so that it returns to its initial volume. We can divide it to make small pizzas or make a big one. To stretch it without complications we stretch it with our hands as we can or with a roller, the shape is the least, if it comes out square if you get a great round mass. We will put the ingredients, first the tomato, then the cheese and the rest of the things that we want to add.

The last step is the oven, and it is not the least important. With the oven preheated to a minimum of 230 ºC we put the pizza. We can use a stone for the oven or a tray. If we have stone the base of the pizza will be more crispy but we do not have to complicate the life, they are very rich in any tray that you have.

We will bake for about 8-10 minutes, until it browns slightly.

Although we can make the pizza with a flour of force, it comes out just as rich with normal flour.
We can add fresh yeast or even sourdough, but dry or instant baker's yeast is very good.
Let's increase the volume without worrying about time. It may take less if it is hot and it will take longer if it is cold.
