My Bentgo Meal Prep
Hey guys, I’m back, and this time with a meal prep post. I had recently gotten a Bentgo lunch box, which is pretty nice, I will do a product review on that sometime soon so keep an eye out for it. Today I am gonna talk about how I had prepped my lunch for work with this lunch box over the weekend.
The Bentgo lunch box is in a bento style so I had followed the same style when making my lunch. This style consists of having everything balanced and portioned out for a well rounded meal. Traditionally bento’s follow a 4:2:1 ratio of rice or some other carb, protein, and another side item, most times fruit or vegetables, respectively. Following this idea, I decided to have my carb to be chicken and vegetable fried rice, which also kinda took care of my protein. For the fried rice I had cut the chicken into bite size pieces and marinated it with soy sauce, teriyaki sauce, and some ground black pepper, leaving it set for about an hour in the fridge before I cooked my fried rice.
When I was ready to cook the fried rice, I started out by getting a pot hot then added some oil and the entire content of my marinade bag, chicken and the sauce-mix. After my chicken was most of the way done, I added some leftover rice that was in the fridge from the night before and mixed well, making sure not to let it set for very long, otherwise the food will stick.
After the food was mixed well, I had added some vegetables, making sure they are in bite size pieces. I had decided to use some broccoli and carrots that I had on hand.
As a side note if you put you vegetable scraps into a gallon freezer bag and store in the freezer you can make a vegetable stock when the bag is full.
After I had everything heated through, I made a well in the center and added some oil. When it was hot I cracked an egg into the well and mixed it in the pot. When the egg started to set I mixed the egg up again, and when it was most of the way cooked mixed the whole pot again and removed the pot from the heat. Since I had made this for dinner and just took some for work, I served it once I had removed it from the heat and put some into my Bentgo box, fill the bottom compartment.
Moving from the bottom up I had already made a rolled omelet and sliced it up, so a few slices took one compartment. I will make another post for how I did the rolled omelet if you guys want to know, just leave a comment and speak up, I will be checking.
For the other compartment, I had used some cupcake liners to put some grapes and a couple orange slices in, and that completes my meal prep. All in all, everything tasted good and I felt full and was done in a half hour, which is critical when you only have a half hour for your break.
