The week is winding down my friends! Need a quick healthy dinner?
I remember when the kids were young dinners were tough. I would rush home from work and everyone was starved! I couldn’t make dinner fast enough! The slow cooker was a close friend during those years. I don't use my slow cooker as much but I still have those evenings when dinner needs to be easy. (Yes, even those of us who love cooking don't always want to cook! lol)

Remember those Tostones…
I shared with you last week? If you missed my post feel free to check it out! I made Tostones using green plantains. When they’re green, they’re quite starchy and mild tasting. As I mentioned in my last post, Plantains are rich in fiber, vitamins A, B-6 and C, potassium and magnesium! They’re healthy!
Let them ripen, and they’re sweet!
When I say ripen, the Plantain skin will begin green, turn yellow and eventually black! That is when they are the sweetest! They’re wonderful and tonight I made a wonderful quick and healthy Cuban Bowl which I wanted to share with you!
Simple Ingredients
- Sweet Potato (2 medium)
- Ripe Plantain (2 large)
- Coconut Oil (2 tbsp.)
- Cumin (1/2 tsp)
- Salt and Pepper (to taste)
- Avocado
- Black Beans
- Brown Rice
- Birds Spicy Pico Salsa
- Fresh Lime
Start the Rice…
and while it is cooking slice the sweet potato. Sauté for about 7 minutes in one tablespoon of coconut oil and cumin. When nicely browned and tender remove from heat and set aside.
Slice the Plantains…
and sauté those in 1 tablespoon of coconut oil until they’re golden brown. These really brown quickly so keep your eye on them.
Don't forget to warm...
the black beans. Throw in a little Bird Salsa, perhaps a dash of Cumin too? Slice the avocado and lime, it’s time to eat!
Voila! A little Sweet, a little Spicy and Healthy!
Be sure to check out those plantains the next time you see them. What a versatile healthy fruit. Eat it when it’s green or wait until its Black…as a side with dinner, or a sweet dessert. Thanks for stopping by today!

Love me some black beans. When I was farming with my Dad we raised beans. Mostly small whites, pinto or red but once in a while we'd try some turtle (black) beans. They are such a pretty plant but can be seriously damaged by even the smallest rain (or even heavy dew) at harvest time.
This dish is just spectacular looking. I love sweet potato but have never sauteed it. Sounds like a really good choice. I'll give that a try.
I've never had a plantain. I'm allergic to bananas so have never tried one. I'm sure it's my loss.

Wow, @bibtom13, thank you! So you did farming with your dad? That is neat. Beans are time consuming to harvest aren't they. When we lived in the midwest we planted black beans in our garden, they were pretty easy to grow. Although since they are so small, it takes quite a few to accumulate enough for a meal, lol I think you would like sauteed sweet potatoes, made it a bit crispy which I liked. Too bad you can't eat the plantain, it was a nice sweet surprise.
Our harvesting was all mechanized, with some fairly exotic equipment. Beans were planted and raised in 'rows' that we cut then windrowed at night to maximize the moisture. They dried for a few days then we harvested them with an 'ordinary' combine that was specifically set up for beans. I actually loved the whole process...
